1. Bisquick baking mix (3/4c)
2. milk (1 1/4c)
3. pepper (1/8tsp)
4. dried basil leaves (1/2tsp)
5. butter or margarine (1/4c)
6. eggs (3)
7. sour cream (1/4c)
8. shredded Monterey Jack cheese (1c)
9. dried thyme leaves (1/2tsp)
10. salt (3/4tsp)
11. crushed garlic (1 med. Clove)
12. chopped pared eggplant (1c)
13. chopped onion (1/4c)
14. chopped green pepper (1/2c)
15. chopped tomato (1/2c)
16. chopped zucchini (1c)
Method of preparation:-
1. First heat the oven to 400 degrees. Take a pie plate of 10*12 inches.
2. Take a saucepan, heat butter in it and cook onion, green pepper,garlic, tomato, eggplant and zucchini in it until they become soft and crispy. Stir it and then spread the mixture in pie plate and dust the cheese over the mixture.
3. Take a blender, beat all the remaining ingredients in it on high speed for about 15 seconds. Then pour this mixture over the mixture of pie plate.
4. Place the plate in oven and bake it at 400 degrees for about 30 to 35 minutes until the tooth pick inserted in the center of pie comes out clean. Keep the pie for 5 to 10 minutes to cool and cut it into slices and serve it.
