Impossible Greek Spinach Pie Recipe

1. Bisquick baking mix (1/2c)
2. sliced green onions (1/2c)
3. butter or margarine (1tbsp)
4. creamed cottage cheese (1/2c)
5. pepper (1/4tsp)
6. lemon juice (1tsp)
7. eggs (3)
8. milk (1c)
9. frozen chopped spinach, drained and thawed (1package about 10 oz)
10. finely chopped garlic (1clove)
11. feta cheese (2tbsp)
12. ground nutmeg (1/4tsp)
13. grated parmesan cheese (3tbsp)
Method of preparation:-
1. Take a pie plate of 9*1 ΒΌ inches and grease it. Take a frying pan, place it over heat. Heat butter in it and then cook garlic and onion in butter for about 2 to 3 minutes until the onions get soft. Mix spinach in it. Then layer the spinach mixture into the greased pie plate and then spread the cottage cheese over it.
2. Take a blender, beat eggs, milk, bisquick, pepper and lemon juice in it for about 15 seconds until the it gets smooth or beat with hand beater for about 1 minute. Then pour it over the cottage cheese mixture. Dust the feta cheese, nutmeg, and parmesan cheese over it.
3. Place the pie plate in oven and bake it at 350 degrees for about 35 to 40 minutes. Take out the pie from the oven and check it by inserting knife in the center. If it comes out clean then the pie is ready. Decorate it with ripe olives according to your desire.
