Peach Custard Ice-Cream with Fresh Peach Compote Recipe

Ingredients
For Ice-cream
1. Egg yolks (5 large)
2. half and half (1 c.)
3. whipping cream (1 1/2 c.)
4. sugar (1/4 c.)
5. peeled and sliced peaches ( 1 pound)
6. vanilla extract (1/2 tsp.)
7. corn syrup (1/4 c.)
Compote
1. Essencia (orange Muscat wine) (1/2 c.)
2. sliced peaches (4 large)
3. fresh lemon juice (2 tsp.)
4. sugar (1/2 c.)
Method o f preparation
1. Take a medium size saucepan. Put 1 cup of cream, 1/2 cup of sugar and half and half in it. Place it on low heat.
2. Beat egg yolk in small bowl and put it into cream mixture in a sauce pan. Stir the mixture on medium heat until the custard gets thicken for about 5 minutes and then strain this mixture into a bowl.
3. Take medium size sauce pan. Put peaches, 1/4 cup of sugar and corn syrup in it. Place the pan on medium heat until the peaches get heated properly for about 5 minutes.
4. Now, mash the peaches to form puree. Cook it completely. Put this mixture into custard along with half cup of cream and vanilla. Put this in ice-cream maker to form ice-cream.
For compote
Mix al the ingredients like peaches, sugar, Essencia and fresh lemon juice in a bowl. Keep it aside for some time. Toss it occasionally.
Serve ice-cream with compote.
