These cookies are light and refreshing. These are very delicious.

Ingredients:
1. All purpose flour (1 1/2cups)
2. fresh lemon juice (2tbsp.)
3. lemon zest (1tsp.)
4. softened butter (1/2cup)
5. baking powder (1/2tsp.)
6. white sugar (1/2cup)
7. salt (1/8tsp.)
8. granulated sugar (1/3cup)
9. egg (1)

Method of preparation:
1. Take a large bowl. Beat butter and sugar in it with a blender until it gets creamy. Beat an egg in it.

2. Mix flour, baking powder, lemon jest, salt and lemon juice in it. Mix thoroughly in form of dough then cover it and keep the bowl in refrigerator for about two hours until it gets firm.

3. Now heat the oven to 350 degrees F. Roll out the dough in small size about 1/4 inch thickness on floured surface with a rolling pin. Cut it in round form with cutter to make cookies.

4. Place these on ungreased cookie sheet. Sprinkle granulated sugar on it. Bake it for 8 -10 minutes until it gets lightly brown. Then let these cookies get cool and store in air tight container.
